Cinnamon Roasted Almonds

2lbs almonds
1-2 egg whites
1 1/2 cup of sugar
1 tablespoon cinnamon

Pour almonds in a bowl, add one egg white, mix throughout, if the almonds don't look completely coated, add the next egg white.

Mix cinnamon & sugar in a bowl and pour over the almonds

Spread them over a baking sheet evenly

Bake at 225 for 1 hour, stirring every 10-15 minutes.

If you bake them at 425, then they will be black and crispy by minute 27, in case you were wondering... I don't recommend.
